It's not a carving, it's a shaving. Layers of pumpkin are removed, parts are stained with oil-based marker, and a fluorescent lightbulb is stuck inside to make it glow. They're on display at Rhode Island's Roger William's Park Zoo or by viewing the Flickr album.
Wow! That is impressive. I don't think that I've seen this technique before.
